Robbie, I will post two recipes. One is for the times fresh tomatos aren't available... but don't be fooled, it lives up to it's name.
"BEST-EVER" SALSA
2 cans 14oz stewed tomatos (original)
1/4 med white onion
1/4 cup cilantro (fresh leaves only)
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 cup pickled jalapano slices

Place onion, cilantro and jalapanos in food processor. Hit pulse a few times (2 or 3) short burst only. Add tomatos, onion power and garlic powder and hit pulse 2 or 3 more short hits. Makes 1 quart.

My "SALSA"
This is a little more difficult to explain because it's by feel...

Cilantro (Fresh)
Onion (White)
Tomatos (Fresh)
Jalapanos (Fresh)
Garlic (Minced)

I make large quanties using tomatos from my garden. I use a food processor and add approx 1/4 cup of cilantro leaves only, 1/4 cup onion, 1 teaspoon garlic and one or two jalapanos seeded. Blend and add to stock pot and heat until salsa comes together appox. 30 min.s to a rolling boil. Place in sterilized jars and place jars in a boiling water canner. Use a pot not 4" wider than your burner. Place a wire rack on the bottom to keep the jars from resting on the bottom of the pot. Information on canning is available from your county Extension Office free. This salsa is more of a personalized (fly-by-the-seat-of-your-pants) salsa. Feel free to change it up and go with what feels right...
